  • 2 tablespoons Vinegar apple cider vinegar can be used
  • 2 tablespoons Lemon Juice fresh lemon juice is best
  • 4 Garlic minced
  • 2 teaspoons Smoked Paprika
  • 1 teaspoon Sweet Paprika
  • 1 tablespoon Oregano dried works well
  • Salt to taste
  • Pepper to taste
  • Chili optional, fresh or flakes
For Grilling
  • 2-3 pounds Chicken bone-in preferred
Optional Garnish
  • Lemon Wedges for freshness
  • Fresh Herbs such as parsley or cilantro

Method
 

Step-by-Step Instructions
  1. Prepare the Marinade: In a mixing bowl, whisk together olive oil, lemon juice, vinegar, garlic, smoked paprika, sweet paprika, oregano, salt, pepper, and chili if desired.
  2. Marinate the Chicken: Place chicken pieces in a large zip-top bag, pour in the marinade, and refrigerate for at least 4 hours or preferably overnight.
  3. Preheat the Grill: Set grill to medium-high heat at about 400°F, preheat for 10-15 minutes.
  4. Grill the Chicken: Grill skin-side down for 5-6 minutes, flip and continue for another 5-8 minutes, until internal temperature reaches 165°F.
  5. Let it Rest: Transfer chicken to a plate, cover with foil, and let rest for 5 minutes.
  6. Serve and Enjoy: Slice the chicken, garnish with lemon wedges and herbs, serve with salad or roasted potatoes.
