Ingredients
  

For the Dressing
  • 1 cup Lemon Juice fresh is best for brightness
  • 2 tablespoons Apple Cider Vinegar can substitute with white wine vinegar
  • 1/3 cup Olive Oil extra virgin is recommended
  • 1 tablespoon Honey can replace with maple syrup for vegan option
  • 1/2 teaspoon Flaky Salt regular sea salt can be used
  • 1/4 teaspoon Black Pepper fresh cracked pepper elevates the dish
For the Salad
  • 3 whole Oranges use navel or cara cara oranges
  • 1/2 cup Toasted Almonds substitute with walnuts or pecans if desired
  • 100 grams Feta crumbled, goat cheese can be an alternative
  • 1 medium Cucumber peeled or unpeeled as preferred
  • 3 cups Rocket/Arugula substitute with baby spinach if desired
  • 1/2 cup Mint can swap with basil
  • 1/4 cup Dill substitute with parsley if unavailable

Method
 

Dressing Preparation
  1. In a small jar, combine lemon juice, apple cider vinegar, olive oil, honey, flaky salt, and black pepper. Shake vigorously for 30 seconds until well emulsified.
Orange Preparation
  1. Zest one orange and then peel and slice the remaining oranges into circles and semi-circles. Arrange them on a plate.
Cucumber Preparation
  1. Slice the cucumber in half lengthwise and then dice into semi-circles. Place next to the orange segments.
Salad Assembly
  1. On a large serving platter, layer arugula, followed by orange slices, cucumber, fresh mint, dill, crumbled feta, and toasted almonds.
Serving
  1. Drizzle the dressing over the salad right before serving and sprinkle with cracked black pepper.
