Ingredients

For the Mochi Dough
  • 1 cup Sweet Rice Flour This flour gives the mochi its signature chewy texture.
  • 2 tablespoons Sugar Adjust based on the ripeness of the peaches.
  • 1 pinch Salt Enhances overall flavor.
  • 1 tablespoon Cornstarch Prevents sticking; potato starch works too.
For the Filling
  • 6 pieces Fresh Peaches Opt for ripe, soft peaches for the juiciest bites.

Equipment

  • steamer
  • Mixing Bowl
  • Parchment paper
  • Tray

Method

Step-by-Step Instructions
  1. In a large mixing bowl, combine sweet rice flour, sugar, and salt. Gradually add warm water while stirring until the mixture is smooth and lump-free.
  2. Pour the prepared dough into a steaming tray lined with parchment paper. Bring water to a boil in a steamer pot and carefully place the tray above the simmering water. Cover and steam for about 20 minutes.
  3. Once the dough is steamed, carefully remove the tray from the steamer and let it cool for about 5-10 minutes.
  4. Prepare a clean work surface by dusting it generously with cornstarch. Take a small portion of the mochi dough and flatten it into a circular shape. Place a peeled peach in the center, then gently fold the dough around it.
  5. Ensure that the mochi is tightly sealed around the peach. Gently roll the mochi in your hands to achieve a uniform round shape.
  6. Once all the mochi is shaped, place them into the refrigerator for at least 30 minutes.
