  • 1/2 fruit Lemon Juice White wine vinegar is a suitable substitute.
  • 1 clove Garlic Use fresh for the best aroma.

For the Bread
  • 4 slices Ciabatta Sourdough can be used as an alternative.
  • 2 tablespoons Extra Virgin Olive Oil For drizzling.
  • 1 teaspoon Lemon Zest Lime zest can also be used.

Method
 

Prepare Pea Topping
  1. In a food processor, combine frozen peas, pea shoots, grated parmesan, olive oil, lemon juice, minced garlic, salt, and pepper. Pulse until you achieve a rough paste texture.
Toast Bread
  1. Preheat broiler to high. Slice ciabatta into 1/2-inch thick pieces, drizzle both sides with olive oil, and toast in the broiler for 2-3 minutes on each side until golden brown.
Assemble Bruschetta
  1. Spread a generous layer of the pea topping over each toasted ciabatta slice. Sprinkle with additional parmesan and lemon zest.
