Preparation
- Preheat the oven to 400°F (200°C).
- Peel and dice the sweet potatoes into bite-sized pieces. Toss with olive oil, smoked paprika, salt, and pepper.
- Spread the seasoned sweet potatoes on a baking sheet.
- Roast the sweet potatoes for 25-30 minutes, stirring halfway through.
- While the sweet potatoes roast, cook brown rice or quinoa according to package instructions.
- Assemble each bowl with a scoop of rice or quinoa, followed by black beans, corn, and roasted sweet potatoes.
- Top with avocado slices and drizzle lime juice over each bowl. Garnish with chopped cilantro.
