Preparation

  4. Roast the sweet potatoes for 25-30 minutes, stirring halfway through.
  5. While the sweet potatoes roast, cook brown rice or quinoa according to package instructions.
  6. Assemble each bowl with a scoop of rice or quinoa, followed by black beans, corn, and roasted sweet potatoes.
