Step‑by‑Step Instructions
  1. Prepare Marinade: In a medium bowl, whisk together ¼ cup soy sauce, 2 tablespoons mirin, and 2 tablespoons sake until well combined. Add in 2 sliced green onions.
  2. Marinate Chicken: Cut 1 pound of boneless chicken thighs into bite-sized pieces, place the chicken in the marinade, and let it marinate in the refrigerator for at least 30 minutes.
  3. Skewering: Pre-soak wooden skewers in water for 30 minutes. Thread the marinated chicken pieces onto the skewers.
  4. Grill the Skewers: Preheat grill to medium-high heat. Grill chicken skewers for about 10-12 minutes, turning occasionally.
  5. Serve the Yakitori Don: Prepare rice, scoop into bowls, layer with chicken skewers, drizzle remaining marinade, and sprinkle sesame seeds.
