Cooking Steps
- Peel and dice the sweet potatoes, then boil in salted water for 15-20 minutes until fork-tender. Drain and cool slightly.
- Wash and dice the apples into small pieces; no need to peel if you prefer the skin.
- Mash the cooked sweet potatoes in a large bowl; mix in apples, eggs, flour (or oats), cinnamon, salt, and pepper until combined.
- Shape the mixture into patties approximately 1-2 inches in diameter and arrange on a baking sheet.
- Heat olive oil in a non-stick skillet over medium heat; cook each patty for 3-4 minutes per side until golden brown.
- Transfer cooked patties to a paper towel-lined plate to absorb excess oil, then serve warm.
