  • 2 cups sweet potatoes peeled and diced
  • 1 cup apples diced, tart variety recommended
  • 2 large eggs fresh
  • 1/2 cup flour or oats
  • 1 tsp cinnamon
  • 1/2 tsp salt a pinch adds balance
  • 1/4 tsp pepper

Method
 

Cooking Steps
  1. Peel and dice the sweet potatoes, then boil in salted water for 15-20 minutes until fork-tender. Drain and cool slightly.
  2. Wash and dice the apples into small pieces; no need to peel if you prefer the skin.
  3. Mash the cooked sweet potatoes in a large bowl; mix in apples, eggs, flour (or oats), cinnamon, salt, and pepper until combined.
  4. Shape the mixture into patties approximately 1-2 inches in diameter and arrange on a baking sheet.
  5. Heat olive oil in a non-stick skillet over medium heat; cook each patty for 3-4 minutes per side until golden brown.
  6. Transfer cooked patties to a paper towel-lined plate to absorb excess oil, then serve warm.
