- In a small mixing bowl, combine softened cream cheese, Greek yogurt, finely chopped chives, and fresh dill. Add a pinch of ground pepper to taste. Mix everything together until smooth and creamy, about 2-3 minutes.
- Preheat your toaster or skillet over medium heat. Toast slices of whole wheat bread until golden-brown, about 3-5 minutes.
- Slice the ripe tomatoes into ¼-inch rounds.
- Spread the herby cream cheese mixture on one side of each toasted slice. Layer sliced tomatoes on one slice and top with the other slice, spread side down.
- Cut the sandwich diagonally and serve. Optionally sprinkle flaky sea salt or herbs on top.
