  1. In a blender or food processor, add peanut butter, water (or coconut milk), soy sauce (or fish sauce), and rice vinegar. Blend on medium speed for about 30 seconds until well combined and smooth.
  2. Add brown sugar (or honey) and chili sauce into the mixture. Blend for 15-20 seconds to meld flavors.
  3. Incorporate grated garlic and ginger into the blender. Blend for another 10-15 seconds until fully mixed.
  4. Check the dressing’s thickness; add more water or coconut milk if needed for pourable consistency.
  5. Taste and adjust the seasoning as desired. Blend for 5-10 seconds to mix any additions.
  6. If desired, stir in chopped roasted peanuts and a drizzle of toasted sesame oil. Serve immediately or store in the refrigerator for up to 5 days.
