Cooking Steps
  1. Season steak generously with salt and pepper on both sides. Heat skillet over medium-high heat and add oil. Sear steak for 4-5 minutes on each side for medium-rare. Remove from skillet and let rest for 5 minutes.
  2. Lower heat to medium, add minced garlic to skillet drippings. Sauté for 30 seconds until fragrant; scrape bottom of skillet.
  3. Pour in bourbon and increase heat slightly. Scrape bottom to release stuck bits. Let simmer for 1 minute.
  4. Lower heat, add heavy cream, beef broth, Dijon mustard, Worcestershire sauce, and seasoning. Stir and simmer for 2 minutes until thickened.
  5. Slice rested steak against the grain, plate, and drizzle sauce over. Garnish with herbs if desired.
