Method
 

Step-by-Step Instructions
  1. In a small bowl, combine ricotta cheese with a pinch of salt, freshly cracked black pepper, and any desired optional ingredients like garlic powder or red pepper flakes. Mix until smooth and creamy.
  2. On a slice of thick, artisan bread, generously spread the ricotta mixture. Layer on sun-dried tomatoes, followed by a handful of fresh spinach, and top with slices of mozzarella or provolone cheese. Place another slice of bread on top.
  3. In a nonstick skillet, heat 1-2 teaspoons of butter or olive oil over medium heat until melted and bubbling gently.
  4. Carefully place your assembled sandwich in the skillet. Grill for about 4-5 minutes on the first side, until the bread is golden and the cheese begins to melt.
  5. Using a spatula, carefully flip the sandwich to grill the other side for another 4-5 minutes until both sides are golden and crisp.
  6. Remove the sandwich from the skillet, let it cool for a minute, then slice in half and serve immediately.
