Method

Cooking Steps
  1. Begin by bringing a pot of water to a rolling boil. Add the sago pearls and let them cook for about 15 minutes, stirring occasionally until they become translucent. Once cooked, remove from heat, cover, and let sit for an additional 10-15 minutes.
  2. After the sago pearls have rested, strain and rinse them under cold water to stop the cooking process. Set aside in a bowl, ensuring covered.
  3. In a heat-proof bowl, sift matcha powder and gradually whisk in hot water. Whisk vigorously until frothy and well combined, eliminating lumps. Mix in your choice of milk until creamy.
  4. In a large mixing bowl, combine drained sago pearls, evaporated milk, and condensed milk. Adjust sweetness. Pour in matcha milk, add diced strawberries, coconut jelly, and optional strawberry heart jelly. Mix gently until well incorporated.
  5. Scoop the Strawberry Matcha Sago into serving cups. Serve immediately or over ice for added chill.
