  • 1/4 cup Fresh Chives Chopped
  • 1 tablespoon Lemon Juice Fresh is best
  • 1 large Egg Yolk At room temperature

Method
 

Step-by-Step Instructions
  1. Prepare the Steaks: Rest the steaks at room temperature for 30 minutes and season with sea salt and cracked pepper.
  2. Roast the Garlic: Slice the garlic bulb, drizzle with olive oil, season with salt, wrap in foil, and roast on the grill.
  3. Grill the Steaks and Ciabattas: Preheat grill and cook steaks, then add ciabattas cut-side down for 2 minutes.
  4. Caramelize the Onions: Sauté yellow onions in butter, add brown sugar and balsamic vinegar, then cook until thickened.
  5. Make the Roasted Garlic Chive Aioli: Whisk egg yolk and mustard, add olive oil to create an emulsion, then mix in chives, lemon juice, and roasted garlic.
  6. Rest the Steaks: Let grilled steaks rest for 5 minutes before slicing.
  7. Assemble the Sandwich: Spread aioli on ciabatta, layer steak, caramelized onions, and fresh rocket, then top with another ciabatta half.
