Step-by-Step Instructions
  1. Pat the high-quality steaks dry with paper towels, brush both sides with olive oil, and season with salt and pepper. Allow to come to room temperature.
  2. Preheat a cast iron skillet or grill over medium-high heat. Cook the steaks for 4-5 minutes on each side until browned and desired doneness is reached. Let them rest on a warm plate.
  3. In the same skillet, melt unsalted butter, add the large shrimp, season with salt and pepper, and sauté for about 2 minutes until pink and opaque. Set aside.
  4. Pour in a bit of the chicken broth to deglaze the pan. Add remaining broth and heavy cream, then simmer for 2-3 minutes.
  5. Stir in Boursin cheese until melted, add Dijon mustard, and let sauce thicken for another 2-3 minutes.
  6. Return the sautéed shrimp to the skillet, coat with the sauce, and sprinkle with fresh parsley if desired.
  7. Plate the rested steaks, top with creamy shrimp and sauce, and drizzle extra sauce for presentation.
