Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
  3. Add in the egg and vanilla extract, mixing on low speed until fully combined.
  4. In another bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg until well blended.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Portion dough into 1-inch balls and place them on the prepared baking sheet, spacing them 2 inches apart.
  7. Bake for 10 to 12 minutes until golden around the edges but still soft in the center.
  8. Mix together granulated sugar and cinnamon in a bowl. Roll the warm cookies in this mixture until fully coated.
