For the Bun
  • 4 pieces Brioche Bun Alternatives include whole wheat or gluten-free buns.
For the House Sauce
  • 1/2 cup Mayo Substitute with vegan mayo for a plant-based option.
  • 1/4 cup Ketchup For a low-sugar option, use natural fruit spread.
  • 1 tbsp Horseradish Can be skipped for a milder sauce.
  • 1 tbsp Worcestershire Sauce Coconut aminos can serve as a gluten-free substitute.
  • 1-2 tbsp Sriracha Omit for a milder flavor or replace with your hot sauce of choice.
  • 1 tsp Paprika Smoked paprika can be used for a deeper flavor.
  • 1 tbsp Shallot or Garlic Substitute with onion powder if needed.

Equipment

  • Cast Iron Griddle
  • Spatula

Method

Cooking Steps
  1. In a medium bowl, combine the ground beef with Worcestershire sauce, horseradish, and salt, mixing gently to incorporate flavors without overworking the meat.
  2. Form the seasoned ground beef into balls, about the size of a golf ball, and refrigerate for about 15 minutes.
  3. Preheat a cast iron griddle or flat top grill over high heat until it reaches around 450°F (232°C).
  4. Carefully place a cold meatball onto the hot griddle and smash the meatball down firmly until it’s about ¼ inch thick. Cook for about 2-3 minutes.
  5. Just before the patties finish cooking, place a slice of American cheese on each patty and cover to melt.
  6. Butter the inside of your brioche buns and place them on the griddle, cut side down, to toast for about 1-2 minutes.
  7. Spread house sauce on the bottom bun, place a cheesy smash patty on top, add toppings, and finish with the top bun.
