Cooking Steps
- In a medium bowl, combine the ground beef with Worcestershire sauce, horseradish, and salt, mixing gently to incorporate flavors without overworking the meat.
- Form the seasoned ground beef into balls, about the size of a golf ball, and refrigerate for about 15 minutes.
- Preheat a cast iron griddle or flat top grill over high heat until it reaches around 450°F (232°C).
- Carefully place a cold meatball onto the hot griddle and smash the meatball down firmly until it’s about ¼ inch thick. Cook for about 2-3 minutes.
- Just before the patties finish cooking, place a slice of American cheese on each patty and cover to melt.
- Butter the inside of your brioche buns and place them on the griddle, cut side down, to toast for about 1-2 minutes.
- Spread house sauce on the bottom bun, place a cheesy smash patty on top, add toppings, and finish with the top bun.
