Step‑by‑Step Instructions
  1. In a large pot, warm 2 tablespoons of olive oil over medium heat until it shimmers.
  2. Add 1 finely chopped onion and sauté for about 3-5 minutes until translucent.
  3. Stir in 3 minced garlic cloves.
  4. Add 1 chopped bell pepper and cook for an additional 2-3 minutes.
  5. Stir in 1 cup of chopped tomatoes and cook for about 5 minutes.
  6. Sprinkle in 1 teaspoon of smoked paprika and a pinch of saffron, mixing well.
  7. Now, add 2 medium-sized diced potatoes.
  8. Pour in 4 cups of fish stock or water and bring to a gentle boil.
  9. Reduce heat to low, cover the pot, and let it simmer for about 15 minutes.
  10. Gently add 1 pound of cubed firm white fish and simmer for another 5-7 minutes.
  11. Stir in 1 cup of frozen green peas and heat for an additional 2 minutes.
  12. Season with salt and pepper as needed, then garnish with fresh parsley.
  13. Serve with lemon wedges.
