  • 1 lb Ground turkey lean
  • 1 can Black beans drained and rinsed
  • 1 cup Corn frozen or canned
  • 1 cup Bell pepper any color, chopped
  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 1 can Diced tomatoes fresh or canned
  • 1 tbsp Chili powder adjust to taste
  • 1 tsp Cumin
  • 1 tsp Paprika smoked for extra flavor
  • to taste Salt and pepper adjust to preference
  • 2 cups Shredded cheese cheddar or Mexican blend
  • 1 cup Cooked rice optional
  • 1/4 cup Fresh cilantro optional, for garnish

Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, warm a drizzle of olive oil over medium heat and cook ground turkey for about 7-10 minutes.
  3. Add chopped onion, bell pepper, and minced garlic, sauté for 3-4 minutes.
  4. Stir in black beans, corn, diced tomatoes, chili powder, cumin, paprika, salt, and pepper; cook for another 3-5 minutes.
  5. If using, gently fold in cooked rice.
  6. Pour the turkey mixture into a greased 9x13-inch casserole dish.
  7. Sprinkle shredded cheese over the top.
  8. Bake for 30-35 minutes until cheese is melted and bubbly.
  9. Let it cool for 5 minutes before serving.
