  • 1 teaspoon smoked paprika Regular paprika is a suitable substitute.
  • 1 cup half-and-half Use heavy cream for greater richness.
  • 4 oz feta cheese, divided Opt for a block for best results.
  • 2 small limes Lemon juice can be used as an alternative.
For Garnish
  • Fresh cilantro Use parsley if cilantro is not preferred.

Step-by-Step Instructions
  1. In a skillet, heat olive oil over medium heat. Season shrimp with chili powder and salt, then cook 3-4 minutes until pink and opaque. Remove and set aside.
  2. In the same skillet, melt butter and sauté chopped onion for about 4 minutes until softened.
  3. Add minced garlic and cook for an additional 2 minutes, stirring frequently.
  4. Stir in corn kernels and smoked paprika, cooking for about 2 minutes until heated.
  5. Pour in half-and-half and bring to a gentle simmer. Crumble feta and stir until melted.
  6. Add cooked shrimp back into the skillet with lime juice and stir gently to combine.
  7. Transfer to serving plates and garnish with extra corn, lime slices, and fresh cilantro.
