For the Tahini Sauce
  • 1/2 cup Tahini Use sunflower seed butter for a nut-free version.
  • 2 tbsp Fresh Lemon Juice Lime juice can be used as a substitute.
  • 2 cloves Garlic Can substitute with 1/8 tsp garlic powder.

Method
 

Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Cut a large head of cauliflower into uniform, bite-sized florets.
  3. In a large mixing bowl, combine cauliflower florets with olive oil, cumin, paprika, turmeric, salt, and pepper. Toss until well-coated.
  4. Spread the seasoned cauliflower in a single layer on a baking sheet and roast for 25 minutes, turning halfway through.
  5. In a small bowl, whisk together tahini, lemon juice, minced garlic, a pinch of salt, and enough water for desired consistency.
  6. Once the cauliflower is golden brown, remove from oven and drizzle with tahini sauce or serve on the side.
