Method
 

Preparation Steps
  1. In a medium bowl, combine shredded cooked chicken, BBQ sauce, honey, and hot sauce; stir until well-coated.
  2. Heat olive oil in a skillet over medium heat and sauté sliced onions and bell peppers for 5 minutes until soft.
  3. Lay a tortilla flat, sprinkle half with cheddar and mozzarella, layer with chicken mixture, vegetables, and cilantro.
  4. Fold tortilla in half over filling and press down to secure.
  5. Cook folded quesadilla in a skillet over medium heat for 3 minutes on each side until golden and cheese is melted.
