- Heat 2 tablespoons of olive oil in a large pot over medium-high heat. Add diced chicken breast, seasoning with salt and pepper. Cook for 5–7 minutes until golden brown and cooked through. Remove and set aside.
- In the same pot, add minced garlic, stirring quickly for about 30 seconds until fragrant and golden. This enhances the flavor.
- Pour in 1 cup of BBQ sauce, followed by 1 tablespoon of honey and 1 cup of chicken broth. Stir well to combine smoothly and heat.
- Add 12 oz of rotini pasta to the pot, ensuring it's submerged in the sauce. Bring to a gentle boil, then reduce to a simmer. Cover and cook for 12–15 minutes, stirring occasionally.
- Return cooked chicken to the pot, stir gently to coat with sauce, and allow to heat through for another minute.
- Remove from heat, transfer to serving bowls, and garnish with chopped parsley. Serve hot.
