- Preheat your oven to 400°F (200°C) and prepare a sheet pan lined with parchment paper.
- In a mixing bowl, combine soy sauce, pineapple juice, honey, minced garlic, and vinegar. Whisk until smooth.
- Pat chicken thighs dry and marinate them in half of the prepared sauce for at least 15 minutes.
- Arrange marinated chicken on the sheet pan and surround with pineapple chunks, bell peppers, and red onion. Drizzle with olive oil and sprinkle with salt and pepper.
- Roast in the oven for 25-30 minutes, flipping halfway through. Chicken should reach 165°F (74°C).
- In the last 10 minutes, brush remaining sauce over the chicken.
- Remove from oven, let rest briefly, and serve sprinkled with sesame seeds or green onions.
