Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a sheet pan lined with parchment paper.
  2. In a mixing bowl, combine soy sauce, pineapple juice, honey, minced garlic, and vinegar. Whisk until smooth.
  3. Pat chicken thighs dry and marinate them in half of the prepared sauce for at least 15 minutes.
  4. Arrange marinated chicken on the sheet pan and surround with pineapple chunks, bell peppers, and red onion. Drizzle with olive oil and sprinkle with salt and pepper.
  5. Roast in the oven for 25-30 minutes, flipping halfway through. Chicken should reach 165°F (74°C).
  6. In the last 10 minutes, brush remaining sauce over the chicken.
  7. Remove from oven, let rest briefly, and serve sprinkled with sesame seeds or green onions.
