Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Thaw the cold puff pastry until pliable, about 30 minutes, then roll it out to a 1/8 inch thickness.
  3. Spread an even layer of fig preserves on the pastry, leaving a half-inch border at the edges. Crumble goat cheese over the preserves.
  4. Roll the pastry tightly into a log from the long edge, wrap in plastic wrap, and freeze for 15–20 minutes.
  5. Slice the log into 12–14 equal pinwheels, each about 1 inch thick.
  6. Arrange the pinwheels on the baking sheet with space between each, and brush the tops with egg wash.
  7. Bake for 15–20 minutes until golden brown and puffed.
  8. Let cool slightly, then garnish with fresh thyme or crushed nuts before serving warm.
