Preparation Steps
  1. Heat the oil in a large pot or Dutch oven over medium-high heat.
  2. Season the beef chuck with salt and black pepper, then brown it on all sides for 5 to 7 minutes.
  3. In the same pot, sauté the diced onion for about 3 to 5 minutes until translucent.
  4. Add minced garlic and cook for an additional minute.
  5. Stir in the tomato paste, ground cumin, ground coriander, ground cinnamon, and paprika.
  6. Add the browned beef back into the pot, ensuring it is well-coated in the spices.
  7. Pour in beef broth and diced tomatoes; bring to a boil, then reduce heat and simmer for 45 minutes.
  8. Add diced green bell pepper and sliced carrots; simmer uncovered for 15 minutes.
  9. Taste and adjust seasoning with salt and black pepper.
  10. Garnish with fresh parsley before serving.
