- Melt butter in a saucepan over low heat. Whisk in flour and cook for 1-2 minutes to form a roux. Gradually add milk while whisking until thickened, about 5-7 minutes. Stir in nutmeg and Dijon mustard off heat.
- Spread butter on one side of each slice of bread. Layer ham and gruyère cheese on the unbuttered side of one slice, then pour béchamel on top. Place the other slice on top, buttered side up.
- Cook the sandwich in a preheated skillet over medium heat for 3-4 minutes until golden brown. Flip gently and cook the other side for another 3-4 minutes. Broil for 1-2 minutes if desired.
- Remove from skillet, let rest for a minute, then cut in half and serve immediately.
