- Preheat your oven to 400°F (200°C). Pierce sweet potatoes with a fork and roast on the oven rack for 45-55 minutes.
- Heat a skillet over medium heat, add olive oil, and sauté diced onions for 3-4 minutes until translucent.
- Stir in frozen mixed vegetables and cook for another 5 minutes.
- Add cooked chicken, chicken broth, garlic powder, dried thyme, salt, and pepper to the skillet; simmer for 5-7 minutes.
- Remove from heat and fold in cottage cheese until creamy.
- Cut open roasted sweet potatoes, fluff insides with a fork.
- Fill each sweet potato with the chicken mixture, allowing it to overflow.
