Cooking Steps

  3. Stir in frozen mixed vegetables and cook for another 5 minutes.
  4. Add cooked chicken, chicken broth, garlic powder, dried thyme, salt, and pepper to the skillet; simmer for 5-7 minutes.
  5. Remove from heat and fold in cottage cheese until creamy.
  6. Cut open roasted sweet potatoes, fluff insides with a fork.
  7. Fill each sweet potato with the chicken mixture, allowing it to overflow.
  8. Serve hot, optionally garnishing with fresh herbs.
