Ingredients
  

For the Koftas
  • 1 lb Ground Chicken High-quality for best flavor
  • 1 medium Onion Finely chopped
  • 3 cloves Garlic Minced; garlic powder can substitute
  • 1/4 cup Fresh Parsley Finely chopped
  • 1 tsp Ground Cumin Adjust for milder flavor
  • 1 tsp Ground Coriander Can be omitted
  • 1 tsp Salt Adjust for low-sodium diet
  • 1/2 tsp Ground Black Pepper Or use white pepper
For the Garlic Yogurt Sauce
  • 1 cup Plain Yogurt Greek yogurt works best
  • 2 tbsp Freshly Squeezed Lemon Juice Lime juice is a fun alternative
  • 1 pinch Salt
  • 2 tbsp Olive Oil Can use avocado oil

Method
 

Kofta Preparation
  1. In a large bowl, combine ground chicken, finely chopped onion, minced garlic, and fresh parsley. Add ground cumin, ground coriander, salt, and black pepper. Mix until fully integrated.
  2. Dampen your hands and form oval-shaped koftas, about the size of an egg. Pack them tightly and place on a tray.
  3. Preheat your grill to medium-high heat (375°F or 190°C). Brush grates with olive oil to prevent sticking.
  4. Grill the koftas for 10-12 minutes, turning occasionally until golden brown and cooked through (internal temperature of 165°F or 74°C).
  5. In a separate bowl, mix plain yogurt, lemon juice, and a pinch of salt for the garlic yogurt sauce.
  6. Serve the grilled koftas with the garlic yogurt sauce for dipping. Enjoy warm with pita bread or salad.
