Kofta Preparation
- In a large bowl, combine ground chicken, finely chopped onion, minced garlic, and fresh parsley. Add ground cumin, ground coriander, salt, and black pepper. Mix until fully integrated.
- Dampen your hands and form oval-shaped koftas, about the size of an egg. Pack them tightly and place on a tray.
- Preheat your grill to medium-high heat (375°F or 190°C). Brush grates with olive oil to prevent sticking.
- Grill the koftas for 10-12 minutes, turning occasionally until golden brown and cooked through (internal temperature of 165°F or 74°C).
- In a separate bowl, mix plain yogurt, lemon juice, and a pinch of salt for the garlic yogurt sauce.
- Serve the grilled koftas with the garlic yogurt sauce for dipping. Enjoy warm with pita bread or salad.
