Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Gather your ingredients.
  2. Heat olive oil in a skillet over medium heat. Sauté chopped onion and minced garlic for 2-3 minutes.
  3. Add bite-sized chicken pieces. Cook for 5-7 minutes until golden brown.
  4. Pour in chicken broth and let it simmer. Stir in heavy cream, Dijon mustard, thyme, rosemary, salt, and pepper. Simmer for another 5 minutes.
  5. Mix in shredded cheddar cheese until melted. Combine with cooked rice in a bowl.
  6. Transfer mixture to a greased 9x13 inch casserole dish, spreading evenly.
  7. In a bowl, mix breadcrumbs, Parmesan cheese, and melted butter. Sprinkle over the casserole.
  8. Bake for 25-30 minutes until bubbly and golden brown.
