Ingredients
  

For the Caramelized Onions

  • 2 tablespoons Olive Oil Substitutable with avocado oil.

  • 1 tablespoon Brown Sugar Can replace with maple syrup.
  • 1 tablespoon Balsamic Vinegar Apple cider vinegar is a substitute.

For the Sautéed Mushrooms
  • 8 ounces Cremini Mushrooms Substitutable with button or portobello mushrooms.
  • 2 cloves Garlic Fresh is recommended.

  • 1/2 cup Dry White Wine Optional, substitute with vegetable broth.
For the Sandwich Assembly
  • 4 slices Sourdough Bread Any favorite bread can be substituted.
  • 4 ounces Swiss Cheese Gruyère or mozzarella are alternatives.
  • 2 tablespoons Softened Butter Substitutable with vegan butter.
  • 2 teaspoons Dijon Mustard Optional but recommended; French’s mustard can be an alternative.

Method
 

Caramelizing Onions
  1. Thinly slice the yellow onions. In a skillet, heat olive oil and butter over low heat. Add onions and sauté for 30–45 minutes, stirring until golden brown.
  2. Sprinkle in brown sugar and drizzle balsamic vinegar. Stir and cook for another 2–3 minutes until fragrant. Season and set aside.
Sautéing Mushrooms
  1. In the same skillet, heat another tablespoon of olive oil over medium-high heat. Add sliced mushrooms and sauté for 8–10 minutes until golden brown.
  2. Add minced garlic and fresh thyme, cooking for about a minute. Pour in dry white wine and simmer until reduced.
Preparing the Sandwich
  1. Butter one side of each slice of bread. Spread Dijon mustard on the unbuttered side of two slices.
  2. Layer Swiss cheese, caramelized onions, and sautéed mushrooms on the bread slices.
  3. Top with another slice of bread, buttered side up.
Toasting and Serving
  1. Cook the sandwich on medium heat for 3–5 minutes on each side until golden and crispy.
  2. Remove from skillet, cut in half, and serve warm.
