Caramelizing Onions
- Thinly slice the yellow onions. In a skillet, heat olive oil and butter over low heat. Add onions and sauté for 30–45 minutes, stirring until golden brown.
- Sprinkle in brown sugar and drizzle balsamic vinegar. Stir and cook for another 2–3 minutes until fragrant. Season and set aside.
Sautéing Mushrooms
- In the same skillet, heat another tablespoon of olive oil over medium-high heat. Add sliced mushrooms and sauté for 8–10 minutes until golden brown.
- Add minced garlic and fresh thyme, cooking for about a minute. Pour in dry white wine and simmer until reduced.
Preparing the Sandwich
- Butter one side of each slice of bread. Spread Dijon mustard on the unbuttered side of two slices.
- Layer Swiss cheese, caramelized onions, and sautéed mushrooms on the bread slices.
- Top with another slice of bread, buttered side up.
Toasting and Serving
- Cook the sandwich on medium heat for 3–5 minutes on each side until golden and crispy.
- Remove from skillet, cut in half, and serve warm.
