  • 2 tablespoons canola oil or vegetable oil for neutral taste
  • 10 ounces ripe tomatoes canned tomatoes are a substitute
  • 1 cup chicken stock vegetable stock for vegetarian option
  • 2 cups water adjust for consistency
  • 2 tablespoons light soy sauce tamari for gluten-free
  • 1 teaspoon sesame oil light olive oil as substitute
  • 1/2 teaspoon ground white pepper black pepper is a swap option
  • to taste salt adjust to taste
Egg Mixture
  • 1 egg beaten well
  • 1 tablespoon cornstarch arrowroot powder as alternative
Garnishing
  • 2 tablespoons scallion finely chopped
  • 2 tablespoons cilantro optional

Method
 

Steps
  1. Heat the canola oil in a medium-low heat soup pot until it shimmers.
  2. Add chopped tomatoes and stir-fry for about 5 minutes until soft and juicy.
  3. Pour in chicken stock and water, then add soy sauce, sesame oil, white pepper, and salt. Bring to a boil, then simmer for 10 minutes.
  4. Beat the egg until smooth in a bowl and create a cornstarch slurry with cornstarch and water.
  5. Create a whirlpool in the broth and slowly pour in the cornstarch slurry while stirring.
  6. Gradually stream the beaten egg into the soup, stirring gently to form fluffy strands.
  7. Once the egg is cooked, taste and adjust seasoning, then serve with scallions and cilantro on top.
