Method
 

Cooking Instructions
  1. Preheat your oven to 425°F (220°C), ensuring it reaches this temperature.
  2. In a mixing bowl, whisk together olive oil, ground cumin, paprika, garlic powder, salt, black pepper, and lime juice until a paste forms.
  3. Pat the whole chicken dry using paper towels, then rub the spice mixture all over the chicken.
  4. Place the chicken in a roasting pan, breast-side up, and roast for 1 to 1.5 hours until done.
  5. In a blender, combine mayonnaise, sour cream, jalapeño, cilantro, additional lime juice, olive oil, garlic, salt, and black pepper. Blend until smooth.
  6. Let the chicken rest for about 10 minutes after roasting.
  7. Carve the chicken into portions and serve with the creamy green sauce on the side.
