- Preheat your oven to 375°F (190°C). Grease a mini muffin tin generously with butter or non-stick spray.
- In a large mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, combine the wet ingredients: buttermilk, egg, vanilla extract, and melted butter. Whisk until smooth.
