Preparation Steps
  1. Preheat your oven to 400°F (204°C) and line a casserole dish with heavy-duty foil.
  2. Spread the thinly sliced shallots evenly across the bottom of the dish, followed by half of the garlic cloves, and sprigs of thyme and rosemary.
  3. Drizzle oil over the chicken, season with salt and pepper, then place in the dish and scatter remaining garlic and thyme on top.
  4. Pour chicken broth and white wine around the chicken, allowing it to seep through the shallots and garlic.
  5. Roast uncovered in the oven for about 1 hour until the skin is golden-brown and the internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for a few minutes before serving, spooning pan juices over it.
