- Spread the thinly sliced shallots evenly across the bottom of the dish, followed by half of the garlic cloves, and sprigs of thyme and rosemary.
- Drizzle oil over the chicken, season with salt and pepper, then place in the dish and scatter remaining garlic and thyme on top.
- Pour chicken broth and white wine around the chicken, allowing it to seep through the shallots and garlic.
- Roast uncovered in the oven for about 1 hour until the skin is golden-brown and the internal temperature reaches 165°F (74°C).
- Let the chicken rest for a few minutes before serving, spooning pan juices over it.
