Preparation
- Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine crumbled feta cheese, cream cheese, fresh dill, parsley, garlic powder, and a pinch of pepper. Mix until smooth.
- Lay out a sheet of phyllo dough, brush it generously with olive oil. Place another sheet on top and brush it lightly with oil. Repeat for a total of two sheets.
- Spoon 1-2 tablespoons of the feta filling onto the lower third of the phyllo sheets. Roll tightly into a cylinder, tucking edges to seal.
- Arrange the rolls on the lined baking sheet and brush the tops with beaten egg. Sprinkle sesame seeds over if desired.
- Bake for 15-20 minutes until puffed and golden brown. Keep an eye on them for the perfect crispy finish.
- Remove from the oven, let them cool slightly before serving. Enjoy warm with a squeeze of lemon.
