Ingredients
  

For the Filling
  • 8 oz Feta Cheese Substitute with plant-based cheese for a vegan option.
  • 4 oz Cream Cheese Can be replaced with vegan cream cheese or cashew cream.
  • 2 tbsp Fresh Dill Oregano or basil can be used as substitutions.
  • 2 tbsp Fresh Parsley Can be replaced with cilantro or omitted if desired.
  • 1 tsp Garlic Powder Fresh minced garlic may be used in its place.
  • 1 tsp Pepper Use crushed red pepper for more heat if desired.
For the Dough
  • 12 sheets Phyllo Dough Homemade phyllo can be used, but store-bought is recommended.
  • 1/2 cup Olive Oil Can substitute with melted butter for richer flavor.
  • 1 large Egg (beaten) Omit for vegan versions or use a plant-based egg wash.
For the Topping
  • 2 tbsp Sesame Seeds Optional for garnish.

Method
 

Preparation
  1. Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine crumbled feta cheese, cream cheese, fresh dill, parsley, garlic powder, and a pinch of pepper. Mix until smooth.
  3. Lay out a sheet of phyllo dough, brush it generously with olive oil. Place another sheet on top and brush it lightly with oil. Repeat for a total of two sheets.
  4. Spoon 1-2 tablespoons of the feta filling onto the lower third of the phyllo sheets. Roll tightly into a cylinder, tucking edges to seal.
  5. Arrange the rolls on the lined baking sheet and brush the tops with beaten egg. Sprinkle sesame seeds over if desired.
  6. Bake for 15-20 minutes until puffed and golden brown. Keep an eye on them for the perfect crispy finish.
  7. Remove from the oven, let them cool slightly before serving. Enjoy warm with a squeeze of lemon.

Notes

Keep phyllo dough covered with a damp cloth while working to prevent drying out. Avoid overfilling rolls and patch any tears with small pieces of dough.
