Cooking Steps
- Heat 2 tablespoons of olive oil in a sauté pan over medium-high heat until shimmering.
- Add 1 lb sliced kielbasa and 1.5 cups diced onions to the pan. Sauté for 5-7 minutes until onions are translucent and kielbasa is browned.
- Stir in 2 cloves of minced garlic and cook for about 30 seconds until fragrant.
- Pour in 2 cups of low-sodium chicken broth and 1 can of diced tomatoes. Stir to combine.
- Add 8 oz of dry small pasta and 0.5 cups of milk or heavy cream, season with 0.5 tsp salt and pepper, stir, and bring to a simmer. Cook uncovered for about 15 minutes.
- Once the pasta is cooked, remove from heat and stir in half of 1 cup shredded cheddar cheese until melted.
- Top pasta with remaining cheddar cheese and cover the pan. Let sit until cheese is melted and bubbly.
- Garnish with 0.33 cups sliced scallions before serving.
