Ingredients
  

For the Base
  • 2 tablespoons Olive Oil avocado oil is a great alternative
  • 1 lb Smoked Kielbasa or Turkey/Chicken Sausage feel free to use any cooked sausage
  • 1.5 cups Diced Onion shallots can be used for a milder taste
  • 2 cloves Garlic minced, garlic powder can be used
For the Sauce
  • 2 cups Low-Sodium Chicken Broth vegetable broth is a perfect substitute
  • 1 10 oz can Diced Tomatoes or use fresh diced tomatoes with seasoning
  • 8 oz Dry Pasta consider gluten-free pasta if needed
  • 0.5 cups Milk or Heavy Cream coconut milk for dairy-free option
For the Flavor
  • 0.5 teaspoons Salt adjust to taste
  • 0.5 teaspoons Pepper adjust to taste
  • 1 cup Shredded Cheddar Cheese or substitute with mozzarella or dairy-free cheese
  • 0.33 cups Sliced Scallions for garnish, omit or replace with parsley

Method
 

Cooking Steps
  1. Heat 2 tablespoons of olive oil in a sauté pan over medium-high heat until shimmering.
  2. Add 1 lb sliced kielbasa and 1.5 cups diced onions to the pan. Sauté for 5-7 minutes until onions are translucent and kielbasa is browned.
  3. Stir in 2 cloves of minced garlic and cook for about 30 seconds until fragrant.
  4. Pour in 2 cups of low-sodium chicken broth and 1 can of diced tomatoes. Stir to combine.
  5. Add 8 oz of dry small pasta and 0.5 cups of milk or heavy cream, season with 0.5 tsp salt and pepper, stir, and bring to a simmer. Cook uncovered for about 15 minutes.
  6. Once the pasta is cooked, remove from heat and stir in half of 1 cup shredded cheddar cheese until melted.
  7. Top pasta with remaining cheddar cheese and cover the pan. Let sit until cheese is melted and bubbly.
  8. Garnish with 0.33 cups sliced scallions before serving.
