Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine the marinade ingredients. Whisk until well blended.
  2. Place the skirt steak in a large Ziploc bag and pour the marinade over. Seal and marinate for at least 1 hour, up to 4.
  3. Heat a cast iron skillet with canola oil over medium-high heat for 15 minutes.
  4. Carefully add the marinated skirt steak to the skillet, cooking for about 5-6 minutes on each side until medium-rare.
  5. Transfer the steak to a cutting board and let it rest for 5 minutes. Then slice thinly against the grain.
  6. Warm the mini flour tortillas in a dry skillet for about 30 seconds on each side. Assemble tacos with carne asada, red onion, and cilantro.
  7. Serve immediately with lime wedges.
