Directions
- Preheat your oven to 400°F (200°C).
- Peel and cube sweet potatoes, toss with olive oil, salt, and pepper. Spread on a baking sheet.
- Roast sweet potatoes for 20–25 minutes, stirring halfway through.
- Whisk together Dijon mustard, maple syrup, apple cider vinegar, olive oil, thyme, salt, and pepper in a medium bowl.
- Coat chicken thighs in marinade, allowing to marinate for at least 15 minutes.
- After 10-15 minutes of sweet potatoes roasting, add marinated chicken to the baking sheet and roast for another 15–20 minutes.
- Remove from oven, rest for a few minutes, then serve chicken and sweet potatoes in bowls.
