  • 1 teaspoon Dried Thyme Fresh thyme or rosemary can enhance flavor.

For the Sweet Potatoes
  • 2 medium Sweet Potatoes Other root veggies like parsnips can add variety.

Method
 

Directions
  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube sweet potatoes, toss with olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast sweet potatoes for 20–25 minutes, stirring halfway through.
  4. Whisk together Dijon mustard, maple syrup, apple cider vinegar, olive oil, thyme, salt, and pepper in a medium bowl.
  5. Coat chicken thighs in marinade, allowing to marinate for at least 15 minutes.
  6. After 10-15 minutes of sweet potatoes roasting, add marinated chicken to the baking sheet and roast for another 15–20 minutes.
  7. Remove from oven, rest for a few minutes, then serve chicken and sweet potatoes in bowls.
