Step-by-Step Instructions
  1. Preheat the oven to 325°F (160°C) and cut a crusty baguette into bite-sized pieces.
  2. Smash 15 cloves of fresh garlic with a knife blade and set aside.
  3. Heat 3 tablespoons of olive oil over medium heat, add smashed garlic and sauté for 3-4 minutes.
  4. Toss reserved bread pieces in garlic-infused oil, sprinkle with salt, spread on a baking sheet and bake for about 10 minutes until golden.
  5. Pour in 6 cups of broth, increase heat to medium-high, and let simmer for 2-3 minutes.
  6. If using eggs, beat and drizzle them into the soup while stirring to create ribbons. Cook for 3-5 minutes.
  7. Remove from heat and stir in the juice of one lime.
  8. Serve the soup in bowls topped with crispy garlic bread and lime wedges on the side.
