Ingredients
  

For the Quesadillas
  • 4 pieces Flour Tortillas can substitute with whole wheat or gluten-free
  • 2 cups Shredded Mozzarella or Provolone Cheese use provolone for sharper flavor
  • 1 cup Crumbled Feta Cheese can substitute with goat cheese
  • 1 cup Zucchini can swap with summer squash
  • 1 piece Red Bell Pepper green bell pepper can be used
  • 1 piece Red Onion can substitute with yellow onion
  • 2 tablespoons Olive Oil can substitute with avocado oil
  • 1/2 cup Sun-Dried Tomatoes fresh tomatoes can be swapped
  • 1/3 cup Kalamata Olives any type of olives can be used
  • 1 teaspoon Dried Oregano Italian seasoning can be used
  • to taste Salt & Freshly Ground Black Pepper
  • 1 cup Fresh Spinach or Arugula optional for added greens

Method
 

Step-by-Step Instructions
  1. Warm a large skillet or grill pan over medium heat for about 3–5 minutes until it’s hot.
  2. Combine sliced zucchini, red bell pepper, and red onion with olive oil, salt, pepper, and oregano. Toss to coat evenly and sauté in the skillet for 3–4 minutes until softened.
  3. Place one flour tortilla in the skillet and sprinkle half of the mozzarella cheese over the surface. Add the sautéed vegetables, sun-dried tomatoes, sliced olives, and crumbled feta.
  4. Sprinkle the remaining mozzarella cheese on top, cover with the second tortilla, and press down using a spatula.
  5. Cook for 2–3 minutes on one side until golden brown, then flip and cook the other side until golden.
  6. Remove from the skillet, let cool for a minute, then slice into wedges and serve warm with tzatziki or hummus.
