- Preheat your oven to 400°F (200°C) and prepare a large baking sheet by lining it with parchment paper.
- Cut the mozzarella string cheese sticks into 1-inch pieces.
- Take your pizza dough and lightly flour your work surface to prevent sticking, then divide the dough into 32 equal portions.
- Place one cheese chunk in the center of each dough rectangle, wrap the dough around the cheese, and seal.
- Lay the dough balls seam-side down on the baking sheet, arranging them in a football shape.
- In a small bowl, whisk together milk or beaten egg, then brush over the tops of each roll and sprinkle with flaky salt.
- Bake the rolls for 18 minutes, until puffed and golden brown.
- While baking, melt 4 tablespoons of unsalted butter and mix in grated Parmesan cheese, minced garlic, chopped parsley, chopped basil, salt, and pepper.
- Once out of the oven, brush the garlic herb butter over each roll.
- Slice a piece of cheese into 7 thin rectangles and arrange them on top of the rolls to mimic football laces.
- Serve the rolls with warm marinara sauce for dipping.
