- Rinse the fresh mussels under cold running water, scrubbing the shells and removing any beards. Discard closed mussels.
- Heat 3 tablespoons of olive oil in a large skillet over medium heat for about 2 minutes until shimmering.
- Add 4 cloves of minced garlic and sauté for 1 to 2 minutes until fragrant and golden, being careful not to burn.
- Incorporate 1 cup of halved cherry tomatoes and 1/2 cup of dry white wine, stir and bring to a gentle simmer for about 3 minutes.
- Carefully add the prepared mussels to the skillet, cover and steam for 5 to 7 minutes until shells open wide.
- Turn off the heat, sprinkle in 1/4 cup of fresh parsley and a pinch of red pepper flakes, stir gently to mix.
