Ingredients
  

For the Chicken
  • 1 lb Chicken Breast Substitute with chicken thighs for increased juiciness.
For the Vegetables
  • 4 cups Fresh Spinach Can use frozen spinach; thaw and drain excess moisture.
  • 1 cup Cherry Tomatoes Whole or grape tomatoes work well.
  • 1 medium Red Bell Pepper Yellow or orange sweet peppers can be used as alternatives.
  • 1 medium Yellow Squash Zucchini can easily replace it.
  • 2 cloves Garlic In a pinch, use about 1 teaspoon of garlic powder.
For Cooking & Flavor
  • 2 tbsp Olive Oil Avocado oil or vegetable oil can be good substitutes.
  • 1 tsp Dried Oregano Basil or thyme make excellent alternatives.
  • 1 tsp Red Pepper Flakes Feel free to omit for a milder dish.
For Garnish
  • 1 tbsp Lemon Zest Consider using fresh lime juice for a zesty twist.
  • Salt and Black Pepper Adjust these to taste.

Method
 

Step-by-Step Instructions
  1. Start by patting the chicken breast dry with paper towels and seasoning it generously with salt, pepper, and half of the dried oregano. Allow to rest for about 5 minutes.
  2. Heat a tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken and sear for 5-6 minutes until golden-brown. Flip and cook for an additional 3-4 minutes until fully cooked. Transfer to a plate and keep warm.
  3. In the same skillet, add another tablespoon of olive oil and minced garlic, sauté for about 30 seconds. Toss in the diced red bell pepper and sliced yellow squash, cooking for 4-5 minutes until tender.
  4. Add the sweet cherry tomatoes, cooking for an additional 2 minutes until they begin to burst. Return the seared chicken, folding in fresh spinach, remaining oregano, and red pepper flakes. Sauté for 2-3 minutes until spinach wilts.
  5. Remove from heat and zest a lemon over the stir fry. Adjust seasoning with more salt and pepper if necessary. Serve hot, optionally with rice or couscous.

Notes
