Step-by-Step Instructions
  1. Preheat a large skillet over medium-high heat, adding olive oil until shimmering.
  2. Prepare the ingredients by dicing chicken, cutting bell pepper, halving tomatoes, and slicing onion.
  3. Add diced chicken to the skillet and cook until golden brown, about 4-5 minutes.
  4. Add sliced onion and garlic to the skillet, cooking until translucent, about 1-2 minutes.
  5. Add bell peppers and sauté for another 2-3 minutes until they soften.
  6. Stir in cherry tomatoes and kalamata olives, cook for an additional 2-3 minutes.
  7. Season with salt and pepper, add lemon juice and baby spinach, and stir until spinach wilts.
  8. Serve hot and garnish with feta cheese or parsley if desired.
