Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Prepare the cauliflower by trimming and microwaving it for about 3 minutes until tender. Drain excess moisture.
  3. Cook the Italian sausage in a skillet over medium-high heat for about 15 minutes, breaking it into crumbles and draining excess fat.
  4. Sauté chopped mushrooms in the same skillet for 10 minutes to remove moisture.
  5. Spread ½ cup of pasta sauce in the bottom of a casserole dish.
  6. Mix together the cauliflower, cooked sausage, sautéed mushrooms, and chopped green peppers.
  7. Layer half of the mixture over the sauce, followed by another ½ cup of sauce, half the pepperonis, and 6 ounces of mozzarella cheese. Repeat the layers.
  8. Mix Parmesan cheese with Italian seasoning and sprinkle over the top.
  9. Bake casserole for 30 minutes until the cheese is melted and golden.
  10. Let cool for 5-10 minutes before serving.
