Preparation Steps
- Preheat your oven to 375°F (190°C).
- Wash and thinly slice the sweet potatoes, butternut squash, and carrots into even slices about ⅛ inch thick.
- In a greased 9x13-inch baking dish, layer sweet potatoes, butternut squash, carrots, crumbled feta, and walnuts. Repeat until all ingredients are used, ending with a layer of sweet potatoes and walnuts.
- Drizzle the cranberry honey glaze over the top layer of sweet potatoes.
- Cover with aluminum foil and bake for 40 minutes, then uncover and bake for an additional 15 minutes until the top is golden.
- Allow to cool for about 10 minutes before slicing and serving warm.
