Preparation Steps

  2. Wash and thinly slice the sweet potatoes, butternut squash, and carrots into even slices about ⅛ inch thick.
  3. In a greased 9x13-inch baking dish, layer sweet potatoes, butternut squash, carrots, crumbled feta, and walnuts. Repeat until all ingredients are used, ending with a layer of sweet potatoes and walnuts.
  4. Drizzle the cranberry honey glaze over the top layer of sweet potatoes.
  5. Cover with aluminum foil and bake for 40 minutes, then uncover and bake for an additional 15 minutes until the top is golden.
  6. Allow to cool for about 10 minutes before slicing and serving warm.
