  • 1 medium red onion Sliced.
  • 1/4 cup cilantro Chopped, can be omitted.

For the Dressing
  • 1/4 cup rice wine vinegar Can use apple cider vinegar.
  • 2 tablespoons lime juice Or lemon juice.
  • 2 tablespoons orange juice Can substitute with grapefruit juice.
  • 2 cloves garlic Freshly grated.
  • 1 teaspoon ginger Fresh, adjust based on heat preference.
  • 1 tablespoon raw sugar Honey or agave syrup can be used.
  • 2 tablespoons sesame seeds Toasted sesame seeds add richness.

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C). Wash the whole beets thoroughly and wrap them in aluminum foil. Roast the beets in the oven for about 30–40 minutes until fork-tender.
  2. In a medium bowl, combine rice wine vinegar, lime juice, orange juice, garlic, and ginger. Stir in raw sugar and a pinch of salt, whisking until the sugar dissolves.
  3. In a large mixing bowl, gently toss the sliced beets with half of your prepared dressing and the sliced onion. Ensure the beets are evenly coated.
  4. Transfer the beet mixture to a serving platter. Drizzle the remaining dressing over the salad and garnish with sesame seeds and chopped cilantro, if desired.
