- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, cook the bacon until crispy, about 5-7 minutes. Remove and place on paper towel, reserve bacon fat.
- In a saucepan, combine cream cheese, Parmesan cheese, cheddar cheese, avocado mayonnaise, and heavy cream. Stir until creamy, about 5 minutes.
- Crumble the cooked bacon into the cheese mixture and stir well.
- Sauté diced red onion in reserved bacon fat for about 3 minutes until translucent.
- Add sliced mushrooms and cook for 5 minutes. Then add fresh garlic and baby spinach, stirring until spinach wilts.
- Stir in the cheese mixture and cooked shredded rotisserie chicken, mixing gently over low heat for 5 minutes.
- Transfer mixture into a greased casserole dish.
- Sprinkle mozzarella cheese on top.
- Bake in preheated oven for about 20 minutes until bubbly and lightly browned. Optionally broil for 1-2 minutes.
