  • 3 cups Rotisserie Chicken Shredded
  • 1 medium Red Onion Substitute with yellow onion if preferred
  • 1 cup Mushrooms Substitute with button or shiitake mushrooms if desired
  • 3 cloves Fresh Garlic Can substitute with garlic powder
  • 2 cups Baby Spinach Kale or Swiss chard can be alternatives
  • 1 cup Mozzarella Cheese Consider using provolone or gouda
For the Topping
  • 1 cup Mozzarella Cheese Use other melting types like gouda for unique flavors

Method
 

Step-by-Step Instructions for Keto Chicken Cheese Bake
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook the bacon until crispy, about 5-7 minutes. Remove and place on paper towel, reserve bacon fat.
  3. In a saucepan, combine cream cheese, Parmesan cheese, cheddar cheese, avocado mayonnaise, and heavy cream. Stir until creamy, about 5 minutes.
  4. Crumble the cooked bacon into the cheese mixture and stir well.
  5. Sauté diced red onion in reserved bacon fat for about 3 minutes until translucent.
  6. Add sliced mushrooms and cook for 5 minutes. Then add fresh garlic and baby spinach, stirring until spinach wilts.
  7. Stir in the cheese mixture and cooked shredded rotisserie chicken, mixing gently over low heat for 5 minutes.
  8. Transfer mixture into a greased casserole dish.
  9. Sprinkle mozzarella cheese on top.
  10. Bake in preheated oven for about 20 minutes until bubbly and lightly browned. Optionally broil for 1-2 minutes.
  11. Allow to rest for about 10 minutes before serving.
