  3. Pour in chicken broth, beef broth, and water. Bring to a rolling boil.
  4. Once boiling, reduce heat to low and simmer uncovered for at least 1 hour.
  5. Strain the broth to remove solids, adjusting salt as needed.
  6. Ladle broth into bowls and garnish with chopped scallions and sliced mushrooms.
