- In a medium bowl, whisk together the mayonnaise, red wine vinegar, minced garlic, Italian seasoning, salt, and black pepper until smooth.
- In a large bowl, combine the shredded iceberg lettuce, sliced red onion, and sliced pepperoncini peppers. Drizzle half of the prepared dressing over the salad, tossing gently.
- Preheat your oven to 400°F (200°C). Slice the hoagie rolls lengthwise and layer inside each with provolone cheese. Bake for 3-5 minutes until golden and cheese melts.
- Layer the deli ham, Genoa salami, and pepperoni on the melted cheese. Toss the salad with remaining dressing, mound it on top of meats, and close the sandwich.
- Slice the sandwich in half and serve immediately while the bread is warm and crispy.
